PREPARATION::


Select your favorite Light to Medium roast coffee beans (or any coffee from Sawbwa’s Gold range) and grind it to Coarse grind.

As a starting point, we recommend 30 grams of coffee to 480 grams of water, and then adjust according to your taste. Boil clean filtered or barista water until it reaches 93-96 degrees C. 

Set up your chemex, place your filter on the chemex. Make sure that the triple-fold portion is facing the pour spout and lays across without obstructing it.

 

STEP 1:

Wet the paper filter with hot water and discard the water through the pour spout. 

 

STEP 2:

Transfer your coffee to the filter and gently shake the chemex to flatten the coffee grounds which will allow for a more even pour.

 

STEP 3:

Pour hot water to about 60 grams to wet the grounds, which will cause the coffee to expand “Bloom” (when they release carbon dioxide.) Then stop pouring water for about 30 seconds to let the carbon dioxide escape.

 

STEP 4: 

Pour the first 200 grams of the water over the coffee slowly in circular motion, starting from the center to the spiral out toward the edge and spiraling back toward the middle. Avoid pouring onto the filter directly.

 

STEP 5:

Pour the remaining water, repeat the same pour pattern. Let the water drip through the bottom. Once the desired amount of coffee is brewed, lift the filter with spent grounds out of the brewer and discard.. Brewing should take between 3 - 4 minutes. Depending on your grind size and coffee.
